Mild Ale Malt is made using slightly higher nitrogen than pale malt, mild has good diastatic activity allowing the use of a high percentage of adjuncts in the grist formulation. It is kilned slightly hotter than pale malt to give a fuller flavour. We strongly recommend the use of this malt to obtain the luscious sweetness evident in the best Mild Ales.
