A fantastic German tradition - the Rumtopf. Soak your excess summer fruit in rum and enjoy a great drink in the winter - pop the fruit into a glass of cheap bubbles for even more fun.
Making your own rumpot is easy and not bound by a strict recipe. Most fruits can be used according to your own imagination : strawberries, cherries, raspberries, black- and redcurrants, apricots, peaches, prunes, grapes, pears, apples, pineapples...etc.
A few basic rules : Use only clean and well-washed fruit that has been left to drip dry. Sprinkle apporximately 250g of sugar onto 500g of fruit and leave to settle for 1 hour. Use rum or a neutral alcohol of about 50 % vol. Make sure there is always 2 cm of liquid on top of the fruit. You may need to use a small plate to keep the fruit submerged. Close your rumpot with clingfilm to avoid evaporation of the alcohol and loss of aroma. 3 months after the last fruit addition your delicous rumpot is ready. Cheers !
