Yeast need oxygen during their initial growth phase to increase in numbers A hot wort that has been rapidly chilled will have little or no available oxygen. Aerating the cooled wort prior to pitching the yeast will ensure a good healthy start to your fermentation. The sterile filter ensures that no undesirable yeast or bacteria get pumped in as well.
